Barbarian Brewing was founded in October 2015 by James Long, a former registered trauma nurse turned professional brewer, and his wife BreAnne Hovley. The brewery takes its name from their Siberian Husky, Conan, whose name translates from Gaelic as "Little Wolf," which also inspired their signature Little Wolf IPA. Originally operating out of a smaller space on Chinden Boulevard, the brewery relocated in April 2022 to a spacious, 3,500-square-foot production facility and taproom at 114 East 32nd Street in Garden City. This location sits just a block from the Boise River Greenbelt, making it a natural stopover for cyclists and walkers exploring the river corridor. The taproom opens up to a large outdoor beer garden out back, furnished with picnic tables, shade sails, and patio heaters to combat the Idaho chill during the shoulder seasons.

The brewery has earned a dedicated following by focusing on barrel-aged sours, funky farmhouse ales, and experimental wild fermentations, drawing inspiration from traditional Belgian and French brewing methods. While they also brew robust IPAs and stouts, their true passion lies in their extensive barrel program. Long ages his creations for months or years in oak barrels, using wild yeast strains like Brettanomyces and incorporating local Idaho fruits like cherries, peaches, and plums to create complex flavor profiles. The tap list rotates constantly, often featuring creative kettle sours, fruited goses, and eccentric releases like their Ice Cream Ale series or the Wolf Paw seltzers. Visitors can order customizable beer flights, choosing from a basic six-pour flight of non-barrel-aged beers or a premium flight featuring high-alcohol and barrel-aged selections.

Inside, the industrial-leaning space is dominated by views of the brewing equipment and stacked oak barrels where the magic of slow fermentation occurs. The atmosphere is casual and community-focused, with weekly events like Wednesday night trivia drawing a lively crowd of locals. For food, Barbarian partners with the Crispy Business food truck, which is parked on-site Wednesday through Sunday to serve up pizzas, nachos, salads, and beer snacks. Well-behaved dogs are welcome both inside and out in the beer garden, a nod to the brewery's canine-inspired origins, which also include Thor, the resident Alaskan Malamute who serves as the unofficial emotional support dog. Sitting on the sunny patio or chatting with the knowledgeable servers at the bar, the experience here is centered on the creative, rule-breaking approach to craft beer that has defined Barbarian since its inception.
