Icicle Brewing Company was founded in 2010 by Pam and Oliver Brulotte, opening its doors on Front Street in April 2011. Oliver, a fifth-generation hop farmer from the Yakima Valley, brought deep agricultural roots to the project, while Pam brought a vision for a community gathering place in a town that, at the time, lacked its own dedicated brewery. To design the building, the couple hired architect Todd Smith of Johnston Architects, who drew inspiration from the Hohenhaus Tenne at the Hintertux in Austria to create a structure reminiscent of a traditional European timber barn. In 2019, the brewery expanded its footprint by building a separate production and packaging facility in Leavenworth to meet growing distribution demands, while retaining the original Front Street location as a vibrant taproom and a five-barrel experimental brewery.

The foundation of Icicle Brewing's beer is the exceptionally clean water sourced directly from Icicle Creek, which flows from the Alpine Lakes Wilderness area and meets the Wenatchee River less than a mile from the brewery. This pristine water source allows the brewing team, originally led by founding brewmaster Dean Priebe, to craft beers that respect the spirit of traditional German purity laws without requiring chemical modifications. The draft list features award-winning flagships and seasonal innovations, including the Alpenhaze Hazy IPA, which won a gold medal at the 2023 World Beer Cup, and the Dragontail IPA, which secured gold in 2024. Other mainstays include the Dark Persuasion, a decadent German chocolate cake ale, the Bootjack IPA, and the Icicle Premium Pilsner, which earned a prestigious silver medal at the 2025 European Beer Star Awards in Munich.

The Front Street taproom features large windows with views of the Cascade mountains and a bustling outdoor patio with shared, communal tables. While the brewery does not host food trucks, it offers a curated menu of light snacks and shareables, highlighted by warm, authentic Bavarian soft pretzels served with rich Beecher's cheese sauce, as well as artisan meat and cheese boards. For those seeking a full meal, the Brulottes' sister business, München Haus Bavarian Grill and Beer Garden, sits just down the alleyway, serving up grilled bratwursts, specialty sausages, and cider. The taproom functions as a lively community hub, hosting regular events such as trivia nights, bingo, and live music, where locals and travelers gather to share stories of mountain adventures over freshly poured pints.
