Sleepy Monk Coffee Roasters remains a cornerstone of the Oregon Coast's coffee culture, even as it transitioned from a bustling midtown Cannon Beach storefront into a dedicated, production-only roasting facility. On December 29, 2025, the physical cafe at 1235 S Hemlock Street permanently closed its doors, marking the end of a 15-year era of early morning lines, warm porch conversations, and freshly baked pastries. Twin sisters Rebecca Parker and Rachel Conyers, who had operated the beloved cottage-style coffee house alongside co-owner Joel Bernhard, stepped away from the daily retail grind to focus entirely on the core of the business: roasting exceptional, small-batch organic coffee. Today, the roasting facility continues to operate at full capacity, shipping its signature bags to loyal customers nationwide and supplying some of the region's finest hotels and restaurants.

The story of Sleepy Monk began in 2000 when founders Jane and Victor Harding established the roastery in Cannon Beach. The Hardings brought decades of coffee-crafting experience to the coast, dating back to 1989 when Victor built an espresso cart by hand to sell coffee in the Seattle area. That cart evolved into a brick-and-mortar coffee house in Redmond, Washington, before the couple relocated to Oregon and hand-built their coastal roasting operation. When Rebecca and Rachel took over the mantle, they preserved this meticulous, hands-on roasting philosophy. The roastery sources certified organic, fair-trade beans from international growers, roasting each varietal individually to ensure precision and consistency. For years, the weathered shingle-sided building they occupied was a shared-space marvel, operating as the Sleepy Monk coffee shop by day and transforming into the intimate Irish Table restaurant by night, a beloved local gastropub run by Crystal and Sean Corbin.

Though visitors can no longer stand in the friendly queue on Hemlock Street for a fresh scone or a cup of the legendary chocolate whipped cream, the flavors that defined Cannon Beach mornings are still widely accessible. Sleepy Monk's signature roasts remain the gold standard for coastal brewing. The dark and robust Monastery Blend is a French roast crafted without a bitter bite, celebrated for its smooth, full-bodied finish.
