Sweet Bloom Coffee Roasters represents a masterclass in specialty coffee, founded in 2013 by Andy Sprenger, a highly decorated figure in the competitive coffee world. Sprenger, whose credentials include two U.S. Brewers Cup championships, a U.S. AeroPress Championship, and a runner-up finish at the World Brewers Cup, established the brand's original roastery and tasting room in Lakewood, Colorado. The name itself reflects a dual concept: the white blossoms that appear on a mature coffee plant, and the physical expansion, or bloom, of freshly ground coffee when it first meets hot water. In 2019, Sweet Bloom merged with Two Rivers Coffee, a move that brought co-owner Eric Yochim into the fold to oversee retail operations and hospitality, allowing Sprenger to focus entirely on green buying and roasting. Today, the operation spans three distinct cafes across the Denver metro area, with a highly anticipated fourth location slated to open in the historic Clayworks development in Golden during the fall of 2026.

The company's sourcing philosophy is anchored by its trademarked Seasonal Sweet Spot commitment, which prioritizes freshness and transparency over year-round consistency. Instead of holding green coffee in storage for long periods, Sweet Bloom sources smaller, recently harvested lots that are roasted and served within a tight one-to-three-month window of peak flavor. This approach results in a rotating menu of exceptionally clean, bright, light-roast single origins, such as the honey-processed coffees from Antigua, Guatemala, or vibrant lots from Sidama, Ethiopia. While many third-wave roasters travel to origin to inspect farms, Sweet Bloom famously reverses this dynamic by bringing the producers themselves to Colorado. These producer-focused events allow the growers to taste their own coffees prepared by championship-level baristas and directly connect with the consumers at the end of the supply chain.

Each of Sweet Bloom's physical spaces is designed to foster quiet focus and community, featuring clean lines, natural wood, and abundant natural light. The original Lakewood location on Reed Street houses the primary roasting operations, where guests can sip espresso alongside the humming Loring and San Franciscan roasters. In contrast, the expansive Westminster cafe, located in Downtown Westminster and designed in partnership with Denver's The Made Shop, features towering ceilings, massive windows, and custom wood finishes crafted by Reuben Krupicka. The Arvada outpost, which occupies the former Two Rivers Coffee space on Wadsworth Boulevard, maintains a cozy, neighborhood-centric vibe where locals gather for perfectly pulled cortados, loose-leaf teas, and fresh daily pastries, including highly coveted seasonal doughnuts served on the first Saturday of each month. Across all locations, the focus remains entirely on meticulous extraction, hospitality, and a profound respect for the journey of the bean.
