Cowboy Coffee Co. has served as Jackson’s premier morning anchor since 1989, when co-owner Pete MacIlwaine and his partners set out to establish a rugged, high-quality roasting operation in the shadow of the Tetons. While the business has expanded to include a convenient drive-thru on Highway 89 and a chalet-style outpost on the ground floor of the Alpenhof in Teton Village, the beating heart of the brand remains its classic Town Square location at 125 North Cache Street. Stepping inside this wood-paneled space feels like entering a working piece of Jackson’s modern history. The walls are adorned with local artwork, vintage Western signs, and shelves stocked with branded hats, shirts, and bags of their signature whole-bean coffee. It is a tight, bustling environment where backcountry skiers, fly-fishing guides, and local ranchers gather in flannel and muddy boots, creating a lively hum of conversation about overnight snow totals and river flows.

The coffee program at Cowboy Coffee Co. is built around Arabica beans roasted locally in Jackson Hole to withstand the valley’s notoriously harsh winters. Patrons can choose from classic drip options like the light-bodied Cowboy Cactus Blend or the robust, dark-roast Organic Cowboy Blend, but the shop's creative specialty drinks are the true highlights of the menu. The Huckleberry Mudpot combines sweet huckleberry syrup, white chocolate, espresso, and steamed milk, while the Honey Badger delivers a sweet kick with honey, cinnamon, cayenne, espresso, and steamed milk. Another local favorite is the Mexican Mocha, which features Aztec D'oro chocolate, cinnamon, nutmeg, cayenne, espresso, and steamed milk. To accompany the caffeine, the kitchen turns out hearty, mountain-ready breakfast items. Because of its prime location just steps from the Town Square’s famous elk antler arches, the Cache Street cafe is notoriously busy, especially during the height of the summer and winter tourist seasons. The indoor seating area is small and intimate, featuring a narrow window counter and a few tables, but there is also an upper deck seating area where patrons can sit outside with their dogs. The shop is exceptionally pet-friendly, with leashed dogs often welcomed inside or secured to the outdoor benches while their owners grab their orders.
