Melvin Brewing represents the loud, hip-hop-fueled counterculture of Wyoming's craft beer scene. The brand got its start in 2009 when founder Jeremy Tofte installed a tiny, 20-gallon homebrew system in the back of his Jackson restaurant, Thai Me Up. What began as a rogue side project quickly gained a cult following for its aggressive, hop-heavy profiles that defied the traditional, safe styles of the era. Operating out of a cramped, 180-square-foot closet with a three-barrel system, Melvin's brewers focused on pushing the envelope of West Coast IPAs, eventually earning national acclaim, including Small Brewpub of the Year at the Great American Beer Festival in 2015.
The brewery's rapid expansion led to the construction of a massive, 30-barrel production facility in Alpine, Wyoming, in 2016, affectionately known as the Mothership. Despite the physical move of its primary production down to the Snake River Canyon, the heart of Melvin remained tied to the Tetons. In late 2022, Jackson-based Roadhouse Brewery Group, co-founded by Colby Cox and chef Gavin Fine, acquired Melvin Brewing, keeping the brand's independent Wyoming roots intact while bringing fresh capital and distribution expertise. This transition paved the way for a highly anticipated homecoming in May 2025, when the brand opened the Melvin Dojo at 20 East Broadway Avenue, just off the historic Jackson Town Square.
The Melvin Dojo serves as a high-energy, late-night sanctuary that channels the original spirit of the Thai Me Up days. Inside, old-school hip-hop beats set the tempo for a menu of Asian-inspired street food, featuring steamed bao, pork chashu ramen, and Japanese fried chicken alongside tacos and dumplings. On tap, visitors will find a rotating selection of experimental, small-batch brews alongside Melvin's legendary heavy hitters. These include the flagship Melvin IPA, a piney and tropical West Coast classic, and the formidable 2x4 Double IPA, a 9.9 percent ABV hop bomb that has claimed gold at both the World Beer Cup and the Great American Beer Festival. It is a space where loud music, bold flavors, and world-class brewing collide, proving that Melvin's rebellious soul is still very much alive in Jackson Hole.
